This one would have been more useful if I had posted it a few days ago, I think, but here it is anyway:
Ingredients:
1 1/2 cups pumpkin seeds
2 tsp. melted butter or vegetable oil
salt to taste (or substitute seasoning of your choice)
Directions:
1. Preheat oven to 300° F.
2. Clean pumpkin seeds (okay to leave a little bit of pumpkin on the seeds if desired for flavor)
3. Toss (like a salad) pumpkin seeds in a bowl with the melted butter or oil and seasonings of your choice.
4. Spread pumpkin seeds in a single layer on baking sheet. Bake for about 45 minutes, stirring occasionally, until golden brown.
